living in the U.S., the significant differences I observe between the foods in the U.S. and in Japan is presentation. the presentation in the U.S. is much more likely quantity to Japanese food which we emphasize in harmony, not only the colors into our eyes but also the textures, and in nature and seasons. and seem the volume of taste in American food rather than delicacy and nutrition that are in Japanese food ... I am sorry ... just wish to bring up the attention. it doesn't mean that Japanese food is the best, but coming from a different culture, I feel something is missing in American food. I do know that Japan is small and surrounded by the ocean and nature so we should have much better access to the nature's abundance for preparing food, that nature must have been teaching and educating us Japanese so much. however, Japanese diet has been changing and the number of the people who have health problems has been increasing ... as we, Japanese, have adopted Western foods more into our diet and the fact of building up the stress level ... but I should simply say, the Junk food ! is killing us. ... and the idea of Junk foods is we are too busy that we do not have time to cook or to sit and enjoy food. we do not think food as nutrition anymore but something to just fill our stomachs and taste on our tongues ... the easier the better.
I had a discussion with my friend who was not either this side or that side but brought up my attention into, health and food or spirituality and food. some argue that certain diet lead us to more health/spirituality, and some other suggest to ask our bodies what they want and eat Burger King if that is what the body wants, that regulation is on diet also build the stress level in the body. I agree on both yet I disagree on both, too. I strongly believe eating Burger King won't promote health yet asking our own bodies what they want it very crucial ... but if that the body wants Junk food, I believe it is the chemical that the body wants not the nutritional wise. ... why I conclude this in a strong opinion is ... in Japanese food there is so much wisdom, for example, we cook beans with seaweed. the protein in beans is not completed like in meat and fish. and Japanese's basic diet for protein for long time was from beans. and Japanese have known that for a long time that cooking with seaweed helps the bean's protein to be much closer to whole and also become easy to digest. we now have this science that we can measure those but a long time ago we only had bodies that tell us the truth and the fact of nutrition or toxic, that we were so close to the body's and nature's voices. my body used to tell me what it needed when ever I went to a market but now it doesn't anymore that the body is out of tune by so much chemical, toxic, and pollution. before Junk food came out, what were really the American diet ? there must be the wisdom I am talking about here with Japanese food in American food, too. we must bring back our own body's intelligence to distinguish between chemical and nutrition in diet. when we totally understand about eating then that will bring gratitude, respect, honor, gentleness, kindness, and more with understanding of true sensuality, health and wealth of abundance of nature.
I leave some references about Japanese food here which you do not see many even in Japanese restaurants in the U.S., ( those websites are not expressing enough of what I wish to represent here Japanese food, though ) the people who know Japanese food say it is very healthy and in fact, I have met several people who spoke they got healthy when they visited japan even in a short period of time or since started eating at Japanese restaurants often. this older man I met a while ago he ate Japanese meal for two or more people, a huge meal, at lunch time with two diet cokes. he happily said the diabetic problems he had had got better and lost 80 lb. in a few months after started eating japanese food. ( I was just puzzled listening to his story looking at the volume of his meal right in front of me. ) however, Japanese also have a problem as any traditional food does one or two, that our salt intake is higher so that we have higher number in stomach cancer patients in the world. ( which also caused by stressful life style, too, though. stress has been stressing all over the world. ... sigh. )
